Kelli's Meatless Chili
Grocery List:
Large Onion
1 Shallot
1 Jalapeno - omit if you like mild chili
1 can diced green chilis
2 cans Roasted diced tomatoes
Vegetable broth (you'll need 3 cups)
2 cans pinto beans
1 can black beans (optional)
Beyond Meat Crumbles (optional)
Roasted frozen corn
Lime
Cocoa powder (unsweetened)
Toppings of your choice such as cilantro, cheese, tortilla strips
I'm making the assumption you have the seasonings listed on hand. If not, add to your shopping list.
This is a favorite Winter dinner recipe in our home.
Meatless Chili
1/2 large onion, diced
1 shallot, diced
1/2 jalapeno, fine dice (remove seeds)
Saute onions and jalapeno 3-5 minutes.
Add:
1 can diced green chiles, mild
jalapeno you've just diced (omit if you like mild chili)
Add:
2 cans roasted diced tomatoes
3 cups vegetable broth - I use Better Than Bouillon brand
After sauteing onions, add diced tomatoes. Next, add vegetable broth.
Begin seasoning your chili, tasting as you go along, and again at the end. Adjust according to your taste.
Bring chili to light boil, then reduce heat and simmer 1-2 hours.
Add 1 - 2 cans whole pinto beans, drained.
Tip: Always save the liquid from the beans. If you accidently over season, adding the liquid from the beans (a little at a time) can cool down and save your chili! Ask me how I know ;-)
Seasonings:
1 1/2 tsp Chili Lime seasoning (Trader Joe's)
1 Tbls. chili powder
1 heaping Tbls cocoa powder (important-don't omit)
1 1/2 tsp bbq seasoning of your choice (smoky type is best - I get mine from Old Town Spice & Tea Merchant- THE BEST!)
1 Tbls cumin
1 Tbls brown sugar
Salt and Pepper to taste
After chili has simmered, add 1 - 2 cans whole pinto beans, drained.
Tip: Always save the liquid from the beans. If you over season, adding the liquid from the beans (a little at a time) can cool down and save your chili! Ask me how I know ;-)
At this point, you can add Beyond Meat veggie beef crumbles if you like. I use 1 full package.
Or, add another can of any type of bean you like. Black beans (drained) are great, and skip the beef crumbles.
Add 1/2 bag frozen Roasted corn. I get mine at Trader Joe's.
Simmer another 20 minutes.
Top with cheese (or dairy free cheese), cilantro, and lime. The lime really brightens up the flavors.
