This past weekend we entertained (again!) and I've decided 6 people, is the magic number for me, when it comes to entertaining. It makes for wonderful conversation at the table and not an overwhelming amount of work for me. Because I like to do everything myself, I have a tendency to overdue it. It's important that what I serve is healthy (well maybe not the Lemon Raspberry cake...lol!) and fresh. I love coming up with new twists on recipes I find on Pinterest or The Food Network, or creating my own recipes. Some of you paint, needlepoint, make jewelry...I cook! It's how I express my creativity.
Saturday night's dinner included Salmon in a Red Curry and Coconut Milk infusion, Peach Salad with Herbed Goat Cheese Medallions, Black and Red Rice, Grilled Zuchinni with Red Peppers, and Lemon Raspberry cake for dessert. Since my hubby doesn't care for fish, he grilled a perfect Filet Mignon to go along with our fish.
"You eat with your eyes first," has always been an expression of mine, so I try to make the dishes I prepare, as visually appealing as they are tasty.
